
It's Ratatouille of course!!!
I have a sweet friend that I met in Japan named Coryse. She is from the island of Mauritius. She got this recipe from an italian man at a resort where she used to work. And can I just say that I am so glad that she worked there, and then moved into my ward in Tokyo, so I could have this amazing goodness for the rest of my life. Coryse, you are a true friend.
Ratatouille
1 large onion (chopped)
2 cloves garlic (minced)
3 Tbsp. olive oil
1 can diced tomatoes
1 yellow pepper (diced)
1 eggplant (skinned and diced, then salted a bit to help slow the browning)
1 zucchini (sliced)
1 tsp. fresh thyme
1 tsp. fresh rosemary
Salt and pepper
Basil (chopped)
In skillet saute onions with olive oil until golden brown. Add garlic and saute a minute more.
Add pepper, eggplant, zucchini, thyme, and rosemary and let simmer for 5 minutes. Pour in tomatoes and do a few shakes of salt and pepper. Simmer again for 5 - 10 minutes. Let the flavors just dance and mingle deliciously together. Add basil.
Serve over noodles, bread, or just eat plain. I made some breadstick dough and rolled it out onto a cookie sheet pan, baked it and then put ratatouille over the top, sprinkled with fresh parmesan and monterey jack cheese then baked at 350 for 5 minutes, or until the cheese is melted. YUMMY!!!
